Bird’s Nest Baklava (Osh El Bulbul) Recipe

Osh el Bulbul is an Arabic name means bird’s nest. It is a variant of baklava filled with pistachio. Bird’s nest baklava or Osh El Bulbul is very well known in the countries of Levant. It is made with thin layers of dough rolled and stuffed with Pistachio (or cashews sometimes). It is one of the lightest Arabic sweets, and it has an amazing taste.

How to Prepare Bird’s Nest Baklava (Osh El Bulbul) Recipe

Ingredients:

  • Syrup:
    • 1¼  cup sugar.
    • 1 cup water.
    • 1½ teaspoon lemon juice.
  •  
  • Filling:
    • Pistachio.
  • Dough:
    • Half a packet of kunafa dough.
        • melted ghee

       

Preparation Method

  1. Prepare the syrup by placing sugar, water, and lemon juice in a saucepan over a low heat for ten minutes, then leave it to cool completely, and it is possible to add vanilla or lemon peel as desired.
  2. Heat the oven at 180 ° C, and grease a tray with oil.
  3. Prepare the filling by placing the pistachios in a deep dish. Add about a cup of the syrup over it, then stir it so that the pistachios are covered with the syrup well.
  4. Spread the pistachio mixture in the tray and put it in the oven for several minutes until it dries and the pistachio kernels stick together, then let it cool.
  5. Take a strand of Kunafa and rolled it over two fingers about three times in order to form a small cup resembling a bird’s nest and cut off the excess threads.
  6. Place the nest in the tray and complete the formation of the rest of the kunafa into small nests.
  7. Put some stuffing inside each nest.
  8. Pour an amount of melted ghee to cover the nests and put the tray in the oven for 20-25 minutes until the nests are browned.
  9. Drain the excess ghee from the nests and leave it to cool, then drizzle it with a good amount of syrup.
  10. Carefully remove the nests from the tray and arrange it on a serving plate.
