Zucchini is generally considered one of the most preferred types of plants in the Arab kitchen, and evidence of this is the very large and very wide variety in the methods of preparing and making this type of plant. As a type of appetizer and not as a main meal, here is how to make zucchini Mutabal.

How to make zucchini Mutabbal with yogurt

Ingredients

  • Half a kilogram of zucchini.
  • A teaspoon of salt.
  • A teaspoon of white pepper.
  • A cup of yogurt.
  • Two tablespoons of lemon juice.
  • Four cloves of garlic, crushed.
  • For decoration: a little dry mint, crushed, two tablespoons of finely chopped parsley, and two tablespoons of olive oil.

Zucchini Mutabbal Preparation Method

  1. Wash the zucchini well and clean it of unwanted pieces.
  2. Cut the kernels into three parts and out it in boiling water with a pinch of salt in a wide saucepan.
  3. After the zucchini is cooked, drain the water and put in the pestle and beat until mashed and become soft.
  4. The mashed zucchini is then put in a wide dish, then add the yogurt on the zucchini , with salt, pepper, lemon juice, and mashed garlic. Mix the ingredients with the zucchini well, then put the mixture in serving dish with dry mint and chopped parsley with olive oil and serve as an appetizer next to the main meals.

How to make Zucchini Mutabbal with Tahini

Ingredients

  • Four large zucchini.
  • A teaspoon of white pepper.
  • Small spoon of salt.
  • Half a cup of tahini.
  • Half a cup of yogurt.
  • Quarter cup of lemon juice.
  • For garnish we use finely chopped parsley, olive oil and sumac.

Zucchini Mutabbal with Tahini Preparation Method

  • Step 1: Wash the zucchini, peel it and cut it into large pieces, put it in a tray in the oven with a little oil and leave it in the oven until it is cooked, flipping it when its bottom is brownish color.
  • Step 2: Take out the zucchini tray from the oven, and put it in the blender, then put it in a deep bowl.
  • Step 3: Mix the tahini mixture, which is made and prepared in advance by mixing the tahini with lemon juice,  with half a cup of yogurt while continuing to stir. Add salt and white pepper, with a little water until you get the required density.
  • Step 4: Then this mixture is placed on the zucchini and mixed with each other and put in a serving dish and decorated with chopped parsley and olive oil.
  • Served with Lebanese bread.

Zucchini Mutabbal with grilled tomatoes preparation method

Ingredients

  • Half a kilogram of zucchini kernels.
  • A teaspoon of salt.
  • A teaspoon of white pepper.
  • Half a teaspoon of cumin.
  • A teaspoon of red pepper, crushed.
  • Two large tomatoes grilled in the oven.
  • For garnish, use finely chopped parsley with a little olive oil.

Preparation Method

  1. Step 1: Wash the zucchini, then peel and cut into cubes, then boil it with a pinch of salt in a wide saucepan until it is completely cooked.
  2. Step 2: Drain the zucchini from the boiling water, then put it in a bowl and mash it with a fork until it becomes very small pieces, then roast the tomatoes in the oven.
  3. Step 3: Take out the tomatoes from the oven, peel and mash them well with a fork, taking into account the removal of their suppression, then put on top of the zucchini and add a spoonful of salt, white pepper, and cumin, and mix the ingredients together.
  4. Step 4: Pour the vegetables into a serving dish and garnish with a little ground red pepper, chopped parsley, and olive oil, and serve as an appetizer alongside the main meals.
